What’s Cookin’ Wednesday?

Or shall we say, What’s NOT Cookin’ Wednesday?! Last week I promised a Skillet Lasagna from the Pampered Chef29 Minutes to Dinner cookbook but sorry to say, that ain’t happenin’. That night turned into the biggest dinner mess I’ve had in a long time and while I was going to originally still blog about it and post the recipe I’ve decided against wasting the time to do so. Maybe I’ll try it again someday and put it up at that point but until then, sorry Charlie!

I do have a yummy Banana Bread recipe that I tried out last night. Tucker is usually the king of bananas, sometimes eating up to three a day! However, since his cold a few weeks ago he has barely touched a banana, thus leaving me with a bundle of bananas that were going bad rather quickly. The recipe is super simple and took hardly any time at all to accomplish…my kind of baking! I got the recipe off of Mike’s iPod Touch using an recipe book app called, AllRecipes.

Recipe Type Category: Yummy Baked Goods

Difficulty: 1
Ingredients: 2 cups all-purpose flour, 1 tsp baking soda, 1/4 tsp salt, 1/2 cup butter, 3/4 cup brown sugar, 2 eggs, 3 overripe mashed bananas

1. Preheat oven to 350 degrees F.Lightly grease a 9×5 inch loaf pan.
2. In a large bowl combine flour, baking soda, and salt. In another bowl cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended.
3. Stir banana mixture into flour mixture just until all flour is moistened.
4. Pour batter into loaf pan.
5. Bake in preheated oven for 60-65 minutes or until a toothpick inserted into the center of the loaf comes out clean. Let bread cool in pan for 10 minutes then place on wire rack.
