During the work week I’m not a huge breakfast person. Last year my breakfast consisted of a cup of coffee & a special k bar (preferably strawberry). At least once a week (usually Fridays) I’d stop at McDonalds to splurge on one of their iced coffees & usually a breakfast burrito (I know what you are thinking, but those things are some cheesy yummy goodness I tell ya!)
I decided to try something new this year. One evening last week I prepared breakfast burritos for Mike and I…these were so easy to make & freeze and the perfect thing grab heading out the door each morning! Mike seriously loved them (& I’m sure he’d seriously love for me to make some more pronto).
In the recipe I put turkey sausage, but in my pictures I noticed I actually used pork sausage. Whatever sausage you like would really do just fine. I might try bacon next time and maybe even a few different ingredients. Maybe some hash browns? Or add in some mushrooms? The possibilities are really endless!
